Phew! That was a rough one.

Yeah, last week was not the easiest week I've had. It was really busy- I knew it was going to be a busy week. Plus, we started the week off with a rough start eating terribly to get rid of junkfood I didn't even realize we had in the house. BUT I weighed in today and I lost .8lbs! I'm much more proud of this .8 than I am of last weeks 3+lbs. And that puts me at a total weight loss of 4.6lbs!

Anyway during our rough week this week we did try some excellent recipes! We tried parmesan crusted tilapia, roasted red potatoes, mushrooms, and green beans in a balsamic vinegar, and I just had a delicious breakfast- one egg omelette with a pinch of extra sharp cheddar cheese and stuffed with mushrooms!

The parmesan crusted tilapia is a Rachel Ray recipe and only has 5 ingredients: tilapia, parmesan cheese, paprika, fresh parsley, and olive oil. And it's DELICIOUS!! You can find the recipe here.

I combined 2 recipes for the roasted veggies dish. First I tossed 5 red potatoes chopped into bit size pieces with 2 Tbsp olive oil, chopped fresh parsley, 5 green onions, six cloves of garlic, and salt/pepper. Then I put them in a pan to soften a bit, maybe 3 or 4 minutes (constantly stirring, so the onions and garlic don't brown). Then I put them on a cookie sheet and drizzled a little balsamic vinegar on them and put them into the oven at 400F. Then I chopped up some fresh green beans and tossed them in a bowl with 2 Tbsp of olive oil, 2 Tbsp of balsamic vinegar, and the mushrooms. After the potatoes had been in the oven for about 15 min I added the rest of the veggies to them and tossed them and spread them all out evenly on the pan. I let them cook for another 10-15 min- until all the liquid is gone and they are beginning to brown. Jim HATES vegetables, but loved this! You can also make both recipes separately for lesser calories. The roasted red potatoes can be found here. And the green beans and mushrooms can be found here. I've made them separately and they are just as delicious alone!

The quick one egg omelette is super easy and so good! Get a pan hot on med-high and then spray it with a Pam type product. Scramble one egg in a bowl. Toss about 1/2c of mushrooms in the microwave for about 30 seconds (you don't have to do this, but I like the mushrooms slightly softened). Put the egg in the pan and roll it around until it's round and thin, then sprinkle on your favorite cheese (only about 1/8c) and then pile on the mushrooms to one side of the pan. Then you just have to flip the other side over to cover the mushrooms and VOILA! You have a high protein, low cal breakfast that's good for you and YUMMY!
