So it's been awhile...

I haven't blogged in awhile, but I have been eating so much better and I've lost 13.2 lbs so far.  Jim has lost just under 30 lbs.  We're losing it slowly, but very easily!!  A friend of mine told me how she's losing weight, she calls it "the lazy girls diet".  Basically, you watch your calories Monday through Friday, but you get the weekends off!  It works!  I lose, on average, a little over a pound a week.  It's so easy!  I eat between 1600-1800 calories during the week and I eat whatever I want on the weekends.  That includes eating out, eating sugar, eating whatever I want.  The friend that told me about the diet has lost over 20 lbs.  I haven't even started exercising yet, but she takes walks every day.

Soon I will post recipes of meals that are low cal and that are staples for us.  I just wanted to update for now.

Phew! That was a rough one.

Yeah, last week was not the easiest week I've had. It was really busy- I knew it was going to be a busy week. Plus, we started the week off with a rough start eating terribly to get rid of junkfood I didn't even realize we had in the house. BUT I weighed in today and I lost .8lbs! I'm much more proud of this .8 than I am of last weeks 3+lbs. And that puts me at a total weight loss of 4.6lbs!

Anyway during our rough week this week we did try some excellent recipes! We tried parmesan crusted tilapia, roasted red potatoes, mushrooms, and green beans in a balsamic vinegar, and I just had a delicious breakfast- one egg omelette with a pinch of extra sharp cheddar cheese and stuffed with mushrooms!

The parmesan crusted tilapia is a Rachel Ray recipe and only has 5 ingredients: tilapia, parmesan cheese, paprika, fresh parsley, and olive oil. And it's DELICIOUS!! You can find the recipe here.

I combined 2 recipes for the roasted veggies dish. First I tossed 5 red potatoes chopped into bit size pieces with 2 Tbsp olive oil, chopped fresh parsley, 5 green onions, six cloves of garlic, and salt/pepper. Then I put them in a pan to soften a bit, maybe 3 or 4 minutes (constantly stirring, so the onions and garlic don't brown). Then I put them on a cookie sheet and drizzled a little balsamic vinegar on them and put them into the oven at 400F. Then I chopped up some fresh green beans and tossed them in a bowl with 2 Tbsp of olive oil, 2 Tbsp of balsamic vinegar, and the mushrooms. After the potatoes had been in the oven for about 15 min I added the rest of the veggies to them and tossed them and spread them all out evenly on the pan. I let them cook for another 10-15 min- until all the liquid is gone and they are beginning to brown. Jim HATES vegetables, but loved this! I've made them separately and they are just as delicious alone!

The quick one egg omelette is super easy and so good! Get a pan hot on med-high and then spray it with a Pam type product. Scramble one egg in a bowl. Toss about 1/2c of mushrooms in the microwave for about 30 seconds (you don't have to do this, but I like the mushrooms slightly softened). Put the egg in the pan and roll it around until it's round and thin, then sprinkle on your favorite cheese (only about 1/8c) and then pile on the mushrooms to one side of the pan. Then you just have to flip the other side over to cover the mushrooms and VOILA! You have a high protein, low cal breakfast that's good for you and YUMMY!

Confession time...

So last Saturday evening Jim and I got the boys together and went grocery shopping for the next week. We got ALL good foods and it's ALL fresh foods. YAY us. Well, when we got home I was cleaning out the fridge and came across all kinds of junk food left over from the holidays and bottles of sparkling cidar and all kinds of goodies we have been avoiding. I couldn't give it away, it was all opened and partly eaten, so Jim and I decided to derail for a couple days and eat up all the crap. So from Saturday night through last night (Monday night) we ate all the junk we could to get rid of all of it. It sounds terrible, I know, but we learned some valuable lessons! We learned 2 things:

1. It's not as much fun as we thought it would be. We're fatties, we love to pig out, but it wasn't any fun. We kept asking the other what do you want to eat because neither of us wanted to eat anymore junk.
AND

2. We CRAVED good food ALL weekend long! And our bodies did not react well going back to junk food after only eating decently healthy for a week before hand. That was so surprising to both of us. We are both excited and relieved to get back on track today!

So even though we "cheated" over the weekend. I'm so glad we did because we learned some really good lessons about ourselves. Just another step on our road to wellness.

Well it's not the gold, but I'll take silver!

I weighed in yesterday and I'm down to 293.2 pounds. That's a 3.8 pound loss! I really expected/wanted 5 pounds or more because I'm starting at such a huge number, but it's much better than the .4 pounds I saw just a few days ago, so I'll take it! It's not the gold medal I was expecting, but it's the silver and I'm proud of my silver!

My goals this past week were to track every calorie and to be under my daily calorie allowance, and to work out at least 5 times. I accomplished the first, but not the second goal. Not bad. Again, it's the silver and not the gold, but I'll take it! It's still a positive direction. The last couple days I've wanted to binge eat just because, for no real reason other than that's what I normally do, BUT I DIDN'T!!! THAT is why I'm so very proud of myself! It's been hard not to just eat a little more or snack a little more, but I didn't! I used moderation and motivated myself to keep on track! YAY me!!

We're not sure where Jim is because our scale only goes to 400lbs, but he's tracked his calories, stayed under his allowance, worked out a few times, and basically given up all carbonated drinks (which is HUGE for him)! His triumph this week is that he was able to put on his wedding ring again. He hasn't been able to do that in a long time. YAY him!

We do clean up decently...

So, Jim's before pictures aren't that bad, but I look a little too much like a "sweet spirit" in my before pictures, so I wanted to add a few pics of us during our honeymoon at Carlsbad Caverns because that's where we want to get back to for starters.

The new things you experience when you start to work out...

So I went to the gym the other day then immediately came home to shower- like I've always done after I work out. BUT this time I step into the nice warm shower and the water is very cold on my head while warm on my body. WEIRD! I guess my head was letting out heat from the work out and my head was hotter than the water in the shower, but my body was normal temperature?? That's the only explanation I can think of for my crazy weird shower phenomenon. It was strange, to say the least.

Anyway, we're both doing well. Working out every day, taking Sundays off. And we're eating better, still getting rid of the boxed and junk foods, but staying under our calorie goals. YAY us!
Although today I stepped on the scale to take a peek and I've only lost .4 lbs. I have to admit I was a little disappointed, but a loss is a loss. Right?

Ok, here we go!

We figured we're ready to put this out for the world to see, so that hopefully it will encourage us to put our forks down and get to work! We're so happy and content with each other that we are no longer just visiting Fatty Town, but we own Fatty Town!

Jim wants to lose around 200 lbs, and I want to lose 125 lbs. It's not pretty, and it terrifies me that I admitted how much I want to lose on the world wide web, but something has to be done. Please watch and encourage our progression because we'll need all the support we can get!

Our method? Good ole' hard work in the gym and eating more nutritiously. We'll try to do weekly updates and blogs, and even Jim will contribute with his thoughts and ideas.

So here we go...!
